Breakfast is the first meal of the day. A filling and healthy breakfast have been shown to be essential for having a positive attitude. Needless to say that it needs to be refreshing and enjoyable to keep your energy levels on point for you to get through the day.

And to make your deposition a bit sunnier, sweet breakfast dishes work the best. If you are wondering what to eat for breakfast, or need a quick pick-me-up, here are the top 5 sweet and easy-mood breakfast options to choose from.

1. Coffee Oatmeal

To prepare this lift-me-up breakfast item, you will need freshly brewed black coffee, plain instant oatmeal, milk,  buckwheat honey, shaved coconut, sliced almonds, blueberries, and yogurt. If you’re not a huge fan of black coffee, you can always opt for the sweetest coffee beans of your choice.

First, combine the coffee with milk using a microwave-safe bowl or mug. Then stir to mix. Keep it at a high temperature for about one minute to boil. Now take a serving bowl and pour the instant oatmeal and add the honey. Then add shaved coconut and the sliced almonds and stir to mix.

Pour the warmed milk-coffee mixture on top of the combination of oatmeal and honey. Add more liquid as required to get the desired consistency. Keep stirring meanwhile. Lastly, dress it with yogurt and blueberries, and enjoy!

2. French Toast Sticks

To prepare the French toast sticks, ideally, you will need unsliced wheat bread. However, you can replace it with any loaf of bread of your choice. You’ll also need milk, eggs, granulated sugar, salt, cinnamon, pure vanilla extract, unsalted butter, and confectioners’ sugar for garnishing.

To make the honey-vanilla syrup, you’ll need honey, agave syrup, and pure vanilla extract.

At first, you have to cut the loaf of wheat bread into inch-thick slices and then cut them into inch-thick strips. Take a shallow, large container to whisk the milk, eggs, cinnamon, salt, sugar, and vanilla extract. Mix well.

Use a large skillet to melt the unsalted butter. Work in batches to dip each stick fully into the mixture to thoroughly coat all sides. Let it submerge in the mixture for about 30 seconds and before adding it to the skillet, shake off excess. Cook them until they are golden on all sides. It may take 1-2 minutes on each side.

To make the honey-vanilla syrup, take a small pot and heat the honey, vanilla extract, agave, and 2 tablespoons of water using medium heat for 3 to 4 minutes until warm and fluid. Serve the toast sticks warm with sprinkled over confectioners’ sugar and the honey-vanilla syrup for dipping.

3. Chamomile and Maple Porridge

The ingredients you may need to prepare this dish are rolled oats, plant-based milk (cashew milk), dried chamomile flowers, coconut butter, maple syrup, toasted sliced almonds, and chia seeds or flax seeds.

First, take a small saucepan and keep it over low heat, mix the oats with boiling water as well as the plant-based milk. Now add the tea leaves or chamomile flowers and combine. Stir constantly and cook for 10-12 minutes.

You may remove any larger flower chunks if you want. Use the coconut butter, sliced almonds, maple syrup, and chia or flax seeds for the toppings and your easy and quick dish is ready to enjoy.

4. Vegan Spiced Cake

For this delicious breakfast item, you’re going to need unsweetened applesauce, pure maple syrup, coconut sugar, almond butter, unsweetened almond milk, pure vanilla extract, divided whole-grain spelled flour, old-fashioned rolled oats, ground cinnamon, baking powder, ground ginger, nutmeg, allspice, baking soda, fine sea salt, defrosted frozen or fresh blueberries, and finely chopped shelled pistachios to prepare this tasty dish.

Preheat your oven to 350°F. Line a loaf pan with parchment paper. Take a medium bowl and whisk together the maple syrup, coconut sugar, applesauce, almond butter, vanilla extract, and almond milk until smooth.

In a large bowl, mix spelled flour, cinnamon, rolled oats, baking powder, allspice, ginger, baking soda, nutmeg, and salt. Now, pour the liquid ingredients into the mixture and stir gently for it to come together.

Take a small bowl, and mix the blueberries and the remaining spelled flour. Toss to coat. Use a rubber spatula to fold the chopped pistachios and blueberries into the cake batter.

To bake, pour the batter into your loaf pan, and put it in the oven. When it’s done, take it out to cool down. All that’s left for you to do is cut it into even pieces, and enjoy!

5. Gingerbread Pancakes

To try this recipe, you need all-purpose flour, baking powder, baking soda, kosher salt, ground cinnamon, ginger, cloves, nutmeg, allspice, buttermilk, molasses, egg, pure vanilla extract, cooking spray or butter, confectioners’ sugar, and whipped cream.

Whisk the flour with baking soda, baking powder, salt, ginger, cinnamon, nutmeg, cloves, and allspice to combine in a large bowl.

Take a medium bowl, add the buttermilk, egg, molasses, and vanilla extract to whisk and combine. Now, add the mixture to the flour mixture. Whisk them together until well combined. But, make sure it does not overmix and lose its texture.

Heat a large skillet using medium-high heat. Lightly spray non-stick cooking spray and add some butter to the hot skillet. Work in batches. Add scoops of batter onto it until you see the bubbles on the surface of your pancakes.

After 3 minutes, when the undersides look golden brown, flip. Cook until the other side is golden as well, which may require 2 more minutes. Now, repeat the same steps with the remaining batter. Use the whipped cream and confectioners’ sugar for garnishing and serve immediately to enjoy.
